"I need the original supplier records and payroll records secured before Marcus can alter them," Ethan said.

"That's being arranged," Daniel replied. "Preservation notices have gone to the relevant departments, and the independent team has copies from outside the restaurant. If Marcus changes something now, the comparison may show it."

"He doesn't know that."

"And you must not tell him in the kitchen. If he retaliates against anyone, contact me immediately. We'll intervene through the proper people."

Ethan leaned against the brick wall and watched a delivery bicycle move through the alley. "I built that place to give people a chance. Somewhere along the way it became a place where people are afraid to speak."

"Then it's time to take it back," Daniel said.

"Not just the building. The standards. I don't want to replace one man and pretend the damage disappears."

When Ethan returned to the kitchen, the dinner service had begun. Hannah was struggling to balance two tables because another server had been sent home after questioning a tip adjustment. Olivia helped carry plated entrees to the pass while Victor managed timing with a level voice. The dining room itself looked flawless. Ethan wondered how long a business could survive when its elegance depended upon the silence of the people sustaining it.

Just before eight, Mrs. Harper arrived again. She wore the same navy coat and carried a small folded newspaper clipping in her purse. Hannah greeted her warmly and brought water without being asked, remembering the trouble over the previous visit. Mrs. Harper smiled at the attention and ordered a modest dinner, saying that she was celebrating the anniversary of a happy occasion and wanted to sit in a place where she could hear the piano.

Later, when the check came, Mrs. Harper searched through her purse and discovered that the cash she had counted at home was not all there. An old envelope contained receipts rather than the extra bills she expected. She checked a second pocket, then a third, becoming visibly distressed as she realized she could not cover the full amount. Hannah approached, listened quietly, and went to ask whether a manager could authorize a partial payment.

Marcus emerged before the server could return. "What seems to be the problem?" he asked, loud enough to attract the attention of nearby diners.

"I'm terribly sorry," Mrs. Harper said. "I miscalculated what I had with me. I can leave my name and bring the rest tomorrow. I wouldn't have ordered if I'd known."

Marcus glanced at the bill. "We do require payment tonight. This is not a charity kitchen."

Olivia had stepped into the service corridor with a tray of plates and heard his words. She put the tray down safely, took a few bills from the envelope where she kept emergency cash, and approached Mrs. Harper. "Oh, sweetheart," the older woman said when she realized what Olivia intended, "I couldn't let you do that. Please, enjoy your dinner if you haven't had one."

"It's already been enjoyed," Olivia answered gently. "Let me take care of the difference. You can come back another day and tell me whether we should keep that soup on the menu."
