Ethan approached the pass, and Victor, visiting from Halsted Street to discuss a new supplier arrangement, greeted him with an easy confidence that had once been impossible. "Good morning, Mr. Cole," Victor said.

"Good morning, Victor. How's the shift going?" Ethan asked.

"Busy, but good. We had a delivery problem yesterday, but the vendor corrected it before service. Luis caught the discrepancy."

"I'm glad he knew he could report it."

Victor nodded. "It took him a while to believe nobody would punish him for asking. Now he's getting very good at asking."

A prep cook nearly bumped another worker while lifting a heavy stockpot. Olivia intervened before either person could be hurt and directed them to use a cart. Ethan watched her take the extra minute to check that the route was clear. "Take your time," he said to the employees. "There's no plate worth someone getting hurt."

Later that afternoon Ethan visited the staff room and found an updated board of training opportunities. Luis's name appeared beside a food-preparation course, Priya's beside a leadership workshop, and several dishwashers had signed up to learn new kitchen skills. Ethan read the list without touching it. Not everyone wanted to become a chef, and no one should be made to feel that washing dishes was less honorable than cooking. The point was to allow people to choose their paths rather than be trapped by someone else's opinion of what they deserved.

He also checked the new maintenance record. Reports showed who had submitted concerns, when repairs had been completed, and whether the employees using the equipment had confirmed the result. The record was ordinary, almost dull, and Ethan was grateful for its lack of drama. If the system worked, the next broken wheel would be replaced before a tray fell, not after the worker who reported it had been threatened.

Olivia found him there and asked if he was still studying how the place operated. He told her he was trying to make sure the policies existed outside boardroom presentations. She offered him a half-amused glance and said the best way to learn the kitchen remained doing the work. Then she handed him a clean apron and asked whether he could spare ten minutes to help clear an unexpected stack of prep dishes.

"I can arrange a dishwasher to help," Ethan said.

"Careful," Olivia replied. "I might put you on the schedule."

He laughed, took off his jacket, and rolled up his sleeves. The hot water still smelled the same, and the stainless-steel pans were no lighter than they had been during his undercover shifts. The difference was in the conversation around him. People warned each other about hot surfaces, thanked the person who brought supplies, and asked for help without waiting for a problem to become a crisis.
