Friday morning would be his final undercover shift. By the end of the evening, Marcus and the staff would learn that the quiet dishwasher was Ethan Cole, founder and majority owner of the group. Ethan had anticipated the manager's shock, but he had not adequately prepared himself for Olivia's reaction. She had trusted him as a coworker, not as a man with authority over her future, and there was a difference he could not erase merely by saying he had good intentions.

Before going to sleep, he opened an old photograph stored in a drawer beside his desk. It showed his first restaurant, a crowded line of stools, and his mother standing behind the counter with a towel over her shoulder. He could almost hear her telling him that a good business was not a beautiful dining room full of frightened people. It was a place where the person washing dishes could speak without being treated as less human than the person paying for dinner.

The next morning he reached the Halsted Street kitchen before the staff briefing. The room was already awake: Victor checked deliveries, Priya reduced a sauce over a low flame, and Olivia arranged small containers of herbs with the precision of someone setting the stage for a performance. Hannah had polished the water glasses, Luis had moved the repaired rack into service, and an electrician had finally arrived to address the hazard beside the dish machine. These changes had come through the ordinary maintenance process after Daniel's intervention, and nobody had been told that Ethan had anything to do with them.

Marcus arrived in a dark blue suit and surveyed the room. "Nobody is taking this place away from me," he announced. "A major investor could visit at any moment. I expect perfection."

He pointed directly at Ethan. "And you, try not to embarrass us if you have to enter the dining room."

"I'll do my job," Ethan said.

"Your job is to stay invisible."

Victor stepped between the pass and the prep table before the exchange could continue. "The team is ready for lunch. We've checked each station, and the replacement equipment is working."

"See that it stays that way," Marcus said. "I will not tolerate any disruption tonight."

Throughout the day, Ethan watched the staff carry more than their ordinary workload. Marcus had arranged additional flowers, requested polished serving pieces that were rarely used, and insisted on a menu with several labor-intensive courses. He had not approved extra kitchen support, claiming the current team would perform better under pressure. Olivia prepared sauces while answering junior cooks' questions, and Victor quietly changed the timing so nobody would need to rush a dangerous task.

At midafternoon a tray of clean pans arrived at the pass before anyone called for them. Olivia looked up in surprise and saw Ethan standing by the rack. "We need the rest after service," she said. "Don't exhaust yourself now."
